You've asked for it, you've been patient, and now you get your reward... the Tomahawk Steak is now available from Lone Mountain!  Cut from the Rib, this beast of a steak is absolutely going to steal the show at your next dinner party.  Perfect for sharing with a group.  This chop shows all of what Lone Mountain Wagyu is capable of: rich, decadent, tender and delicious.

The Tomahawk steak is cut from the center part of the prime rib roast with the full rib bone included creating a handle. It’s the thickest chop that we offer and shows off incredibly on the grill.  A perfect candidate for the "reverse sear" method and building an incredible crust.  This steak is a must have!

Prep Tips

Cooking Tips: We love the reverse sear method for this thick steak.  Heat the grill to medium high. Season the steak with salt and pepper or your favorite rub.  We're looking for Maillard reaction - that's brown and crispy.  Starting the steak on a rack and sheet pan in a warm oven (200F) for 30-40 minutes is a great way to achieve the edge to edge even cooking on this extremely thick chop. Once you have reached an internal temperature of 10-15F below your finished temp (130F) for medium rare. Transfer to hot grill and sear this baby hard.  This method works well for the grill, broiler or a hot cast iron or heavy skillet.  Let the steak rest for 5-10 minutes and then carve for your eager guests!

Serving Tips 

When it comes to serving your perfectly cooked Wagyu tomahawk steak, presentation is key. Start by slicing against the grain to ensure tenderness in every bite. Arrange the pieces on a warm platter to keep them at the ideal temperature. Consider garnishing with fresh herbs like thyme or rosemary for an aromatic touch. 

Pair the Wagyu tomahawk steak with sides that complement its rich flavor, such as garlic mashed potatoes or grilled asparagus. A simple drizzle of high-quality olive oil or a sprinkle of flaky sea salt just before serving can elevate the dish further. Enjoy!

Handling & Thawing

Not digging into your Wagyu right away? Place your vacuum-sealed package in your freezer upon delivery. Your meat should be good for up to 12 months in your freezer… though we doubt it will stay there that long!

Have some time? Thaw your beef in the refrigerator for up to 48 hours. This is the best way to thaw, allowing the Wagyu to retain all of its natural juices for an exceptional flavor.

Hungry sooner? Keep beef in the vacuum-sealed package and submerge in a bowl of cold water for a few hours.

Change of dinner plans? Thawed steaks still in the vacuum-sealed package can be safely refrozen as long as they have remained refrigerated and have not been thawed for longer than a day.
